Lemon slice
The base:
170g plain flour
55g icing sugar
a pinch of salt
170g unsalted butter
zest of 1 lime

rub butter and flour together to form bread crumb like appearance, add icing sugar and lime zest. Press over bottom of a slice tin
put in oven at 170c for 20 mins
remove from oven and let cool slightly

Topping:
4 eggs
zest & Juice of 2 lemons
350g caster sugar
175g whipping cream

add eggs and sugar together and beat until well combined.
mix in cream and lemon
pour over base, cook in 170c oven for 40 mins, or until topping is spongy looking
cut into slices, and serve slightly warm or chilled.

Results: this slice was pretty yummy. i added the juice from the lime to the topping mix, and it was very yummy. But if you dont like super lemony things, dont do this. I think it also made it a little bit sloppy. So perhaps cook a little longer if you do this

shanks a lot (golden balsamic lamb shanks)

Slow cooked golden balsamic shanks
(this recipe was adjusted from bec, and the womens weekly baby food book)

1/4 cup golden syrup
1/4 cup balsamic vinegar
2 cups chicken stock
2 cloves of garlic
4 lamb shanks
1 Tbs cornflour

Add everything to the slow cooker, except the cornflour.
cook on high for 4 hrs, or low for 6-8 hrs.
when ready to serve, remove 3/4 of the liquid and put in a saucepan.
add 2 Tbs hot water to the cornflour to make a paste,
add to the liquid in the saucepan and bring to the boil, simmer for 5 mins or until thickened.
serve with vegies :)
Results: this was yummy and easy. I found i couldnt eat too much of the sauce cos it was quite sweet, i also found that the meat was a little dry as the liquid didnt cover them in the slow cooker, could probably add another cup of stock to increase the liquid.
I ate it with mash, would have been nice with some peas as well, but we were too lazy :P

Cream Cheese Brownies

Cream Cheese Brownies
(Nigella Lawson)
makes 8-10

125g dark chocolate
125g unsalted butter
2 large eggs
200g caster sugar
1tsp vanilla extract
75g plain flour
pinch of salt
200g cold cream cheese

1. preheat oven to 180 degrees
2. melt the chocolate and butter over medium heat in a heavy based saucepan
3. meanwhile, beat the eggs, sugar and vanilla in a bowl.
4. measure flour into another bowl and add the salt
5. when chocolate mix has melted, take off the heat and let cool for a few mins, then beat in the eggs slowly.
6. Finally, add the flour and beat until smooth
7. pour half the batter into a greased 23cm square tin (4cm tallish)
8. thinly cut the cream cheese and put in a single layer over the brownie mixture
9. Add the remaining batter, and gently make sure all the cream cheese is covered.

bake in the oven for 20ish minutes, until the top looks dry, but a knife poked in will show gooey centre.
let cool for 10 mins before slicing, sprinkle icing sugar over the top :)

Results: this was quite yummy, especially warm :) the cream cheese adds a bit of a savoury flavour in the middle, making it easy to eat a lot....
its nice and gooey in the middle, although there isnt much texture, ie, walnuts, so wouldnt be my favourite brownie, but very yummy all the same!

Pour immediately over cakes in a bowl and serve with a scoop of yummy icecream and cream

Notes: This recipe was adjusted from a few different recipes by dear Skye. She was in need of a tasty dessert, with limited ingredients.... and came up with this. Needless to say, its a masterpiece!!

this dessert is light and fluffy, and very easy to make. Would be yummy enough for a dinner party, just increase the recipe depending on how many you want to make :)
