shanks a lot (golden balsamic lamb shanks)


Slow cooked golden balsamic shanks
(this recipe was adjusted from bec, and the womens weekly baby food book)

1/4 cup golden syrup
1/4 cup balsamic vinegar
2 cups chicken stock
2 cloves of garlic
4 lamb shanks
1 Tbs cornflour

Add everything to the slow cooker, except the cornflour.
cook on high for 4 hrs, or low for 6-8 hrs.
when ready to serve, remove 3/4 of the liquid and put in a saucepan.
add 2 Tbs hot water to the cornflour to make a paste,
add to the liquid in the saucepan and bring to the boil, simmer for 5 mins or until thickened.
serve with vegies :)
Results: this was yummy and easy. I found i couldnt eat too much of the sauce cos it was quite sweet, i also found that the meat was a little dry as the liquid didnt cover them in the slow cooker, could probably add another cup of stock to increase the liquid.
I ate it with mash, would have been nice with some peas as well, but we were too lazy :P
