Cream Cheese Brownies


Cream Cheese Brownies
(Nigella Lawson)
makes 8-10

125g dark chocolate
125g unsalted butter
2 large eggs
200g caster sugar
1tsp vanilla extract
75g plain flour
pinch of salt
200g cold cream cheese

1. preheat oven to 180 degrees
2. melt the chocolate and butter over medium heat in a heavy based saucepan
3. meanwhile, beat the eggs, sugar and vanilla in a bowl.
4. measure flour into another bowl and add the salt
5. when chocolate mix has melted, take off the heat and let cool for a few mins, then beat in the eggs slowly.
6. Finally, add the flour and beat until smooth
7. pour half the batter into a greased 23cm square tin (4cm tallish)
8. thinly cut the cream cheese and put in a single layer over the brownie mixture
9. Add the remaining batter, and gently make sure all the cream cheese is covered.

bake in the oven for 20ish minutes, until the top looks dry, but a knife poked in will show gooey centre.
let cool for 10 mins before slicing, sprinkle icing sugar over the top :)

Results: this was quite yummy, especially warm :) the cream cheese adds a bit of a savoury flavour in the middle, making it easy to eat a lot....
its nice and gooey in the middle, although there isnt much texture, ie, walnuts, so wouldnt be my favourite brownie, but very yummy all the same!
